An extra tip when it comes to preparing squash: Unless you have extremely sharp and high-quality knives, I find it’s best to soften the squash in a preheating oven for about 5-8 minutes. This makes it much easier to cut into and you won’t risk chopping a finger or two off.

Holy moly, where to begin with this. I love EACH and EVERY ONE of these amazing ideas to use squash! Curry, Buddha bowls, chili, soup, stir-fries, and salads are my favorite ways to use squash. I even bake with butternut squash sometimes–it’s a great way to sub pumpkin or applesauce! I have to try that Moroccan stew and the fall harvest power bowl someday!
