Ingredients You Will Need

Carrots and honey are a match made in heaven – and for good reason. All it takes is 7 ingredients, most of which you probably already have on hand. Here’s a list of what we need:

  • carrots – any carrots will work. I love the different colors of rainbow carrots, but orange carrots will also do the trick. Use whole carrots and cut into 1-inch pieces or go for baby carrots to save a step in the kitchen.
  • honey – use whichever honey you have on hand – clover, wildflower or raw. Maple syrup is a great sub – and makes this recipe vegan.
  • olive oil – for richness and body – and that glistening sheen. Avocado oil or ghee works too.
  • garlic – to add a level of savory, aromatic flavor. Mince the garlic to the finest texture for the strongest garlic flavor.
  • fine sea salt – to enhance all those honeyed carrot flavors.
  • ginger – for a spicy pop. I used ground ginger for ease, but you can use 1-inch piece of fresh ginger, peeled and grated for even more zing.
  • cinnamon – for warmth and that quintessential fall flavor. The ground spices really compliment the sweetness of the carrots, too.
  • Fresh herbs – finish with any fresh herb you like just before serving. My favorites for this recipe are fresh thyme and parsley.

How to Make Glazed Carrots

Honeyed carrots are a thing of beauty – and ready in just over 30 minutes! Here’s how I like to do it:

Prep Equipment

Preheat oven to 400ºF and line a sheet pan with parchment paper (which helps to prevent sticking).

Mix Honey Glaze

Whisk together honey, olive oil, garlic, salt, ginger and cinnamon in a small bowl until fully combined.

Toss with Glaze

To a large bowl, add the sliced carrots and toss with the honey glaze mixture until evenly coated.

Then transfer carrots onto the prepared baking sheet, making sure to get scrap all of the glaze from the bowl onto the carrots.

Bake

Spread the carrots evenly in a one single layer.

Bake for 20-25 minutes, until golden with some crispy edges.

TIP: If your oven has a convection setting, you can use that for the last 5 minutes, or broil for 2-3 minutes for a more caramelized coating.

Serve

Garnish with fresh thyme or parsley. Serve warm or room temperature.

Serving Suggestions

This honey glazed carrots recipe can be served in so many different fashions. Some of my favorites include:

  • Holidays: Elegant enough for the holidays – and highly addictive! – I like to serve a large platter of this honey glazed carrot recipe right alongside Green Bean Casserole, Cauliflower Mashed Potatoes and Maple Roasted Brussels Sprouts.
  • Weeknight Side Dish: Make weeknight dinners extra special and serve these with heartier fare like chicken, steak or fish.
  • Weekend Brunch: Nothing says good morning like a platter of honey roasted carrots. The sweet and savory flavors go great with pancakes, waffles, quiche and more.

How to Store & Make Ahead

Leftover honey carrots will keep in an airtight container in the fridge for up to 4 days.

Make Ahead: Prep and bake carrots as directed. Once cool, transfer to an oven-safe baking dish, cover with foil and store in the fridge for 1-2 days.

Reheating Instructions: When ready to serve, pop the dish in a preheated 350-degree oven for 15-20 minutes, or until warmed through. If I’m serving these as a side dish for the holidays, I like to pop them in the oven with the rest of my side dishes while the turkey is resting.

Recipe Tips & Notes:

  • Peel or scrub the carrots. Peeling is optional and more about personal preference. If your carrots are fresh and crisp, give them a good scrub with a vegetable brush and skip the peeling.
  • Cut the carrots roughly the same size to ensure even cooking. Slice on the diagonal for a prettier presentation.
  • Use parchment paper. It’s important to line the baking sheet with parchment paper or the carrots and honey glaze will stick to the pan.
  • A hot oven is key. The higher oven temperature will ensure nice browning and caramelized, crispy edges.
  • Create ultra crispy edges. Feel free to use the convection setting on your oven or broil for the last 2-3 minutes.

Ingredients

  • 3 tablespoons honey
  • 3 tablespoons olive oil
  • 2 medium garlic cloves, minced
  • ½ teaspoon fine sea salt
  • ¼ teaspoon ground ginger

Instructions

    Made this for pot luck and it was a hit! My 2 year old even surprised me by having some for dinner. I did sprinkle some more cinnamon and ginger after they were cooked but only because I like the spice!
