What better time to make a cozy bowl of soup for dinner than the middle of winter? Soup and chili is the perfect way to sneak in lots of veggies and protein. Plus, it makes dinner time easy when you can just throw it together and let it cook in the pressure cooker, simmer on the stovetop or cook in a slow cooker all day.
Meal Prep Ideas
There are lots of ways to simplify meal prep with chili and soup for dinner.
- Double Batch – When you are making soup it’s a simple way to cover two meals at once, or lunch for the week by making a double batch of soup or chili.
- Leftovers – You can store it in the fridge for 3-4 days in individual sized containers to quickly reheat in the microwave or on the stovetop for lunch or dinner.
- Freezing – If you prepared a double batch to cover a dinner at a later time, it can be frozen for up to six months in stasher bags or freezer containers.
My White Chicken Chili makes a large batch already, and we love freezing half of the recipe to use for a quick dinner the following month.
Using What You Have
Homemade chili and soup recipes are easy to customize and use up what you have on hand. For example, sweet potatoes can often be subbed for butternut squash or acorn squash, or vice versa.
If you’re using a recipe with meat in it, it’s easy to swap out your favorite, especially when the recipe calls for ground beef, turkey or chicken. Or keep things plant based and sub in your favorite plant based crumbles!
When using beans, you can typically use what you have on hand, the flavors of the soup or chili will change slightly.
Just make sure when your substituting, you don’t use more vegetables or beans than what the recipe calls for. They should be 1:1 swaps to keep the liquid ratios the same and so the recipe cooks properly.
