I love a good fruit salad and this one is super simple – Blueberry Watermelon Salad with feta and mint. Just six ingredients and thrown together in 10 minutes.
Guys, summer officially starts tomorrow and I am seeing watermelon all over the place like CRAY. Which obviously means SUMMATIME is HERE. Weather-wise it’s been here for quite a while, but now it’s official.
I remember something similar being served at a work party and thought “What the heck? You’re putting feta with watermelon?!” I’ll admit I was a little scared. But I tried the concoction and although I was skeptical, I was (obviously) proven wrong.
It’s been a while since I’ve had a watermelon salad so I wanted to bring one to the blog for you all too.
Blueberry Watermelon Salad with feta & mint
So are you ready for the world’s easiest watermelon salad? I mean this thing takes like… well I was going to say five minutes but cutting the watermelon up does take just a little bit of effort. So let’s say it takes less than 10 minutes to throw together, with cutting the watermelon taking up a majority of your time.
Speaking of cutting up watermelon, my friend Alexa over at Fooduzzi has an awesome little tutorial on her site for the easiest and quickest way to cut watermelon – see here. I just used that method for the first time and what a game changer! I mean not only is much quicker I feel like it’s a little bit less messy. Cutting the watermelon that way is great for serving at parties too. And it was the perfect cutting method for this salad because you just cut each watermelon stick into cubes. All about those kitchen shortcuts when possible.
But back to the watermelon salad…

- cubed watermelon
- extra virgin olive oil
How to make the watermelon salad
So after you’ve chopped the watermelon the salad comes together in no time. You basically just toss together the watermelon cubes, blueberries, feta, chopped mint and drizzle with a little bit of oil-lime mixture. You could also leave the oil out and just do the lime for some extra flavor but totally up to you. I know some people need to avoid oil for dietary reasons.
Either way this watermelon salad is super fresh and um, HELLO perfect for 4th of July festivities, right?!

- 6 cups 1″ cubed watermelon
- 1 pint fresh blueberries
- 3 TBS freshly chopped mint
- 2 TBS extra virgin olive oil
- juice of 1 lime
- 4oz feta, chopped

- In large bowl gently combine watermelon with blueberries and freshly chopped mint.
- In small bowl mix together oil and lime juice; drizzle over watermelon and blueberries.
- Add feta and gently toss to combine.
- Cover and transfer to fridge prior to serving.
Salad should keep covered in fridge 2-3 days.
