Ingredients You Need
The ingredient list is short and sweet – literally! Here’s a general breakdown of what you need to make chocolate covered dates:
- Medjool dates – You really want to seek out Medjool dates, which are squishy, sweeter and chewier than Deglet Noor dates. They are easy to find in most grocery stores nowadays or search for them online. Feel free to purchase pitted dates or simply remove the pit and stem end at home.
- Nut butter / seed butter – The filling will depend on your preference. I used a natural cashew butter, but feel free to go with peanut butter, almond butter or Sunbutter. There are even pumpkin seed butter blends too.
- Chocolate chips – Lily’s is a good low sugar / paleo option, whereas Enjoy Life chocolate chips are vegan. You can also melt chopped chocolate bar, like Theo’s or Hu Kitchen.
- Coconut oil – The coconut oil is primarily meant to create a smoother, luscious melted chocolate coating. I find some brands do better with it than others, so if you can handle coconut I wouldn’t skip it.
How to Make Chocolate Dates
There really is no secret to these chocolate dates. All it comes down to is some fun in the kitchen. Here’s how to do it:
Prep Dates
Slice dates lengthwise, making sure not to cut all the way through (pit them if not already).
Stuff Dates
Add approximately 1/2 teaspoon of nut butter into the center cavity of the date and slightly close.
Melt Chocolate
Melt the chocolate chips and coconut oil in 30-second increments in the microwave or over a double boiler. Cool slightly.
Dip in Chocolate
Dip stuffed date into melted chocolate – either the whole date, half or a simple drizzle. Have fun with it! Place on parchment lined baking sheet for easy clean up.
Finish with Topping
Sprinkle with flaked sea salt or other topping of choice. Allow to set at room temperature or in the fridge for 15-30 minutes. Enjoy!
TIP: Do not use the freezer to set the chocolate. The chocolate will start “sweating” at room temperature.

- Chopped dried fruit, such as craisins or goji berries
- Unsweetened shredded coconut

With the right combination of ingredients, you can create a classic dates and chocolate recipe that will be unforgettable. You could try:
- Snickers: Dates with peanut butter and chocolate, need I say more? Use peanut butter as the filling and top with chopped salted peanuts.
- Almond Joy: Stuff with almond butter and sprinkle with unsweetened shredded coconut.
- PB&J: Stuff with peanut butter and finish with crushed freeze dried strawberries or raspberries.

How to Store
These chocolate coated dates will keep in an airtight container in the fridge for up to 1 week. I like to store them in the fridge, that way I have the option to enjoy them cold and the chocolate stays set.
If you prefer to eat them at room temperature, leave them out on the kitchen counter for 5-10 minutes to take some of the chill off.
