These Stuffed Chocolate Covered Dates require only 4 ingredients for a sticky-but-sweet no bake dessert recipe. Swap out the nut butter for any flavor you prefer and go crazy with the toppings. Vegan and Paleo, too!

Ingredients

  • 12 Medjool dates see notes
  • 2-3 tablespoons favorite nut butter or seed butter
  • ½ cup quality chocolate chips
  • 1 teaspoon coconut oil to help smooth chocolate for dipping

Topping Ideas

  • flaked sea salt
  • crushed pistachios
  • freeze dried strawberries

Instructions

  • Slice dates lengthwise (pit them if not already).
  • Fill the center of the date with about 1/2 teaspoon or so of nut butter and slightly seal.
  • Melt the chocolate chips and coconut oil in 30-second increments in the microwave or over a double boiler. Cool slightly.
  • Dip stuffed date into melted chocolate. Or drizzle over top. Place on parchment lined baking sheet and sprinkle with flaked sea salt or other topping of choice.
  • Allow to set at room temperature or in the fridge for 15-30 minutes. Enjoy!

Notes

Medool Dates – Medjool dates will give you a caramel-y, soft and flavorful center.
Nut Butter / Seed Butter – cashew, peanut, almond, sunflower seed, etc.
Chocolate chips – Lily's for low sugar/paleo or Enjoy Life for vegan friendly, or another favorite brand. 
STORAGE – Stuffed dates will keep in an airtight container in the fridge for up to 1 week.
