Sometimes things can get away from us and it’s hard to get healthy, whole foods on the table for dinner. Once the weather gets cold and the days get grey, it’s always a great time to pull out some easy slow cooker recipes.

I, for one, don’t use my slow cooker nearly enough – I really want to make more use of it this year and get back into meal prep mode.

Meal prep isn’t just for “busy moms” or families. Anyone can benefit from a meal that slow cooks all day long and has a delicious meal ready and waiting for them at the end of a busy day. 

There are too many times I’ve found myself stuck with “What’s for dinner?” and end up making breakfast for dinner. Which some days is fine, but other days it gets old and doesn’t leave you feeling satisfied after a meal.

But just by having a little bit of a plan, you can have more healthy, nutritious meals for everyone.
