Ingredients

This healthy peanut butter granola recipe is anything but complicated. All it takes is a few simple ingredients, most of which are probably hanging about in your pantry. You will need:

  • natural peanut butter – that’s right, we want the creamy, drippy, unsalted container of peanut butter with just one ingredient – peanuts! If the oil is sitting at the top, just give the jar a good stir before making the recipe. If you can only find salted peanut butter, omit the salt in the recipe.
  • pure maple syrup – maple syrup gives that extra boost of sweetness. If not vegan, use your favorite runny honey instead and reduce the oven temperature to 300 degrees F.
  • avocado oil – I love avocado oil for the neutral flavor, this way it doesn’t interfere with the peanut butter. But feel free to use olive oil or melted coconut oil instead.
  • vanilla extract – for sweet vanilla essence.
  • old-fashioned rolled oats – old-fashioned rolled oats give way to the best texture. I love Bob’s Red Mill rolled oats. Just make sure to buy gluten-free oats if that is a concern.
  • quick oats – quick oats / instant oats add a textural balance and allow for more granola clusters – the highlight of all granola recipes.
  • chia seeds – chia seeds add subtle crunch and healthy fats and fiber.
  • fine sea salt – to enhance all those peanut butter flavors!

How to Make

Who knew making your own granola was so easy? Here’s how to make this homemade peanut butter granola in a few easy steps:

Prep Equipment

Preheat the oven to 325ºF and set aside a medium baking sheet – no need to line it unless you want.

Mix Wet Ingredients

In a large bowl mix together creamy peanut butter, maple syrup, oil and vanilla until well combined.

Add Dry Ingredients

Add rolled oats, quick oats, chia seeds and sea salt. Stir using large wooden spoon or sturdy spatula, making sure all of the oats are coated well (use your hands to combine at the end if necessary).

Bake

Transfer the wet granola mixture onto your baking sheet and spread it into one even layer. Bake for 15 minutes, then gently flip the granola using a flat spatula and bake for another 15 minutes, until the granola color is golden.

Allow the granola to cool on baking sheet for 20 minutes. As the granola cools, it will get crunchy – don’t skip this part!

Enjoy!

Serve granola in a bowl with cream, yogurt, or enjoy as snack. Granola makes a great homemade gift too!

Additional Add In’s / Mix In’s

While I love this granola and peanut butter recipe just as is, there are a few fun and inspiring additions you can add to truly make it your own. My favorites are:

  • Mini chocolate chips (add after cooling so the chocolate doesn’t melt!)
  • Whole roasted peanuts
  • Pumpkin seeds (pepitas)
  • Sunflower seeds
  • Ground flax seed
  • Flaked coconut

Serving Suggestions

Granola with peanut butter can be served in a number of different ways. Some of my favorites include:

  • With Milk: Serve it in a bowl with a splash of whole milk, almond milk, cashew milk or whatever you so choose.
  • Topping: Sprinkle it on top of yogurt or smoothie bowls.
  • Crunchy Snack: Sneak a handful or two any time the craving strikes. It really tames my sweet tooth in the mid-afternoon.

How to Store Granola

Granola made with peanut butter will keep in an airtight container or glass jar with a lid at room temperature for two weeks. It will loose its crunch if stored in the fridge.

Servings 3 cups

Ingredients

  • 1/2 cup unsalted creamy peanut butter, the natural, drippy kind
  • 1/3 cup pure maple syrup
  • 1/3 cup avocado oil, or coconut oil
  • 1 teaspoon vanilla extract
