Let’s talk grocery shopping…

There are sooo many stores out there to choose from (depending on where you live, I suppose) and each one has its own little place in the market space. I like to hit up different stores for different items, depending on selection of products and prices. Yes, sometimes it’s a hassle going to more than one grocery store… But depending on what side of town I’m on, I can make it worth the trip to visit two or three in one go.

Recently I’ve been introduced to ALDI – not only do I know a bunch of fellow food bloggers who shop there and rave about their prices, but my brother-in-law’s girlfriend worked there and talked about how much she loved their selection. She’s gluten-free and brought some liveGfree Sweet Chili Rice Crisps on our recent trip up north and they were SO good. She also shared some of the liveGfree Cranberry Cashew Honey Granola with us – delicious.

And guess what? The gluten-free brand is now backed by the Good Housekeeping Seal! This means that each liveGfree product was evaluated and quality tested by the food and nutrition experts at the Good Housekeeping Institute, so you know it’s a product you can trust.

After hearing about all of this goodness and trying ALDI products firsthand, I needed to make the trip.

As I entered the store I loved how simple the layout was. You could run in there, grab what you need and be out in no time. I was also blown away by their prices on several of their products. Organic strawberries for less than three dollars, goat cheese for two dollars, organic salad dressing for two dollars. Every aisle I went down I was pleasantly surprised. Most of those products are almost double the cost at other grocers!

Alright so let’s talk this balsamic chicken wrap because it is GOOD.

Sometimes I forget how awesome wraps are – load some of your favorite ingredients into a shell, fold it up, and DONE. It’s basically like a salad but no fork or bowl needed…

The combination of the creamy goat cheese alongside the flavorful chicken and sweet blueberries is a combination that really works. Oh, and the crunchy addition of the nuts! If you haven’t tried adding nuts into your wraps you’re missing out.

I hope you guys give this one a try! It’s the perfect gluten-free meal for lunches, meal prep or when you’re just craving a wrap!

Ingredients

Scale
  • 1lb Never Any! Fresh Antibiotic Free Chicken Breasts
  • SimplyNature Organic Balsamic Dressing
  • liveGfree Gluten Free Wraps, Original or Spinach
  • Happy Farms Preferred Goat Cheese Logs
  • Organic Blueberries
  • SimplyNature Raw Almonds, Pecans & Pistachio Kernels

Instructions

  1. Prepare chicken: place chicken in shallow dish and cover with SimplyNature Organic Balsamic Dressing; cover and refrigerate for at least 30 minutes, up to overnight. Once chicken has marinated, heat grill to medium heat (or use cast iron skillet), and cook chicken breast on 3-4 minutes each side, or until internal temperature reaches 165ºF. Sliced chicken breast into thin strips.
  2. Assemble wraps: Lay out a gluten free wrap on a flat surface. Spread with about 1 tablespoon of goat cheese, add a handful of arugula and spinach mix, place about 3oz of chicken breast, some blueberries and mixed nuts on to the wrap. Begin folding ends of the wrap in and continue rolling while folding.
  3. Gently slice wraps in half; enjoy!

This looks fresh and filling! I am curious if it might be easier to eat if the nuts were chopped?

I seriously could eat these every day for lunch. The goat cheese + blueberries + arugula combo is so good! I leave out the nuts but still one of my favorites!
