Now that summer is officially here we are taking advantage of grilling season as much as we can. Between cookouts with family or just inviting friends over, we really don’t need an excuse to enjoy the outdoors, each others company and good food. And if you’re anything like me (which I take it some of you are if you’re here reading this healthy food blog) you want to make sure there are at least a couple of different “healthier” options to choose from when it comes to feasting time. Of course there is always room to indulge a bit, but whether it is playing host or I am a guest bringing a dish to pass, I always try to make sure I’ve got a couple of wholesome dishes to share. Because let’s be honest, nobody wants to feel bogged down with tons of meat and hefty carbs when it is hot outside. Especially if a pool is involved because there is no way you are waiting 30 minutes to swim if it is 85 degrees and humid as heck. I mean the whole “wait 30 minutes before swimming” thing is probably a myth right? But that’s besides the point…
And I get it – sometimes it is hard to convince the crowd that you do indeed need some kind of healthy option on the table, but I would say most of the time guests are pleasantly surprised with how great the “lighter” options taste. For me, typically I am either feeding A) a bunch of boys–grown men who love meat or B) family who usually go for traditional BBQ style–think potato chips & dip alongside the grilled meat. Not that there is anything wrong with that! But as the healthy foodie I am, I really find joy in sharing something new with friends and family.
Healthy eating – and being able to offer healthier options – is not as hard as it once was. Especially when there are so many more options out there now compared to 10, even five years ago. Avocado Feta Dip
Can one ever go wrong with bringing avocado to a cookout? The answer is obviously no.
If you’re a long-time reader of FMK, you know I have a love for avocados and feta. I typically love the combo for eggs but honestly I can get down with it in any form. So when I was thinking about a new summer dip to share with you all, it only made sense to combine these two incredible ingredients to share the spotlight in this seriously addicting avocado feta dip.
what you need
- red onion
- extra virgin olive oil
So this avocado feta dip is quite possibly my new obsession. It’s kind of like guacamole, but dare I say better? *gasp* Okay, I won’t go there… But it is incredible and on it’s own level.
This dip is loaded with flavor and texture and SO freaking good. And for those of you that are like “Ew, feta…” (don’t worry, I know there are some of you out there) you can simply just leave it out, which also makes this dip vegan-friendly 🙂
Use your favorite Harvest Stone Crackers for dipping and prepare to wow your guests with this healthy avocado feta dip!
- 2 ripe medium avocados; fleshed and diced
- 4oz feta (block will yield best taste and texture)
- 3 medium roma tomatoes, seeded and diced
- 1/3 cup diced red onion
- 2 cloves garlic, minced
- 1/2 cup chopped parsley (or cilantro)
- 1 TBS extra virgin olive oil
- 1 TBS apple cider vinegar (or white)
- 1/2 tsp salt, or to taste
- Harvest Stone Crackers
1. Make sure your avocados aren’t too soft so they hold their texture better. 2. Cut 4oz block of feta into cubes. 3. In a medium bowl combine diced avocado, feta, diced tomatoes, diced red onion, minced garlic, chopped parsley or cilantro, extra virgin olive oil and vinegar. Sprinkle with salt. 4. Gently fold together ingredients with large spoon until combined. Be careful not to mash avocado. 5. Transfer avocado feta dip to serving tray with Harvest Stone Crackers – dig in!
Store leftovers in covered container – cover with plastic wrap and gently press into dip before placing lid on. Leftovers should keep okay (without avocado browning too much) for about 3 days.
