Fresh strawberry sugar syrup requires 3 simple ingredients, including:
- fresh strawberries – one package of bright red strawberries gives us that sweet strawberry flavor.
- filtered water – I specify filtered water for the cleanest flavor.
- granulated sugar – I like regular white sugar, but I suppose brown sugar could also work.
GROCERY STORE TIP: look for ripe strawberries that are red all the way through (from stem to tip), have a bright green tops, and no signs of mushy or moldy berries.

Here I share some step-by-step photos and detailed instructions for how to make a homemade strawberry simple syrup:

dissolve the sugar
Place a medium saucepan over medium heat and add the strawberries, water, and sugar. Stir until the sugar dissolves, then increase the heat to medium. Bring to a low boil for 1 minute.

simmer the syrup
Reduce heat to low and simmer for 20 minutes, stirring frequently.
As the strawberries begin to soften, mash with a potato masher or back of a wooden spoon.

strain the syrup
Remove from heat and cool for 5-10 minutes.
Then, place a fine mesh strainer over a heat-proof bowl, and strain the syrup.
While straining, mash the strawberries slightly.
Note: the harder you mash, the more bits of strawberry will come through.

Serving Suggestions
My absolute favorite way to use this strawberry syrup is in my Iced Strawberry Matcha Latte. But you can also make your own homemade strawberry lemonade or strawberry iced tea. Adding to your Cold Brew Latte is also a great idea!
That doesn’t stop me from enjoying it on ice cream, French toast, or as a strawberry pancake syrup.

How to Store Strawberry Syrup
Transfer the syrup into a glass jar with a lid and cool to room temperature.
Leftover strawberry syrup can be stored in a glass container in the fridge for 2 weeks.
Freeze: Freeze the leftover strawberries in a freezer-safe container or silicon ice cube tray for smoothies.
Thaw: Transfer to the fridge to thaw overnight before using.

Recipe Tips
- Don’t mash too hard: If you want a super clean and smooth simple syrup, try not to mash the strawberry solids too hard or it will make the syrup cloudy.
- Cool completely: The syrup will thicken slightly upon cooling and even more in the fridge. If you prefer a thicker syrup, reduce the water to 3/4 cup.
- Save the fruit pulp as freezer jam: Use them as strawberry jam on toast or freeze for smoothies.

Strawberry Simple Syrup
Ingredients
- 1 lb strawberries, stems removed and quartered
- 1 cup filtered water
- ⅔ cup granulated sugar
Instructions
- In a medium pot over low heat, add strawberries, water, and sugar. Stir until sugar dissolves then increase heat to medium, bringing to a low boil for 1 minute.
- Reduce heat to low and simmer for 20 minutes, stirring frequently. Use a potato masher or back of a wooden spoon to mash down strawberries as they soften.
- Remove the pan from heat and allow the pot to cool for 5-10 minutes, then place a fine mesh sieve over a heat-proof bowl, and strain the syrup through the sieve. You can mash the strawberries slightly to get all of the juices into the bowl. Note: The harder you mash, the more strawberry bits may come through though.
- Transfer the syrup into a glass jar with a lid. Cool completely before storing in the fridge.
