Recipe Highlights:

  • Use up fresh fruit during the peak of strawberry season.
  • The perfect way to add a splash of strawberry to your daily routine.
  • Delicious twist on plain simple syrup with real strawberries!
  • Make it now, save it for later – your own strawberry syrup lasts for 2 weeks!

Recipe Ingredients

Fresh strawberry sugar syrup requires 3 simple ingredients, including:

  • fresh strawberries – one package of bright red strawberries gives us that sweet strawberry flavor.
  • filtered water – I specify filtered water for the cleanest flavor.
  • granulated sugar – I like regular white sugar, but I suppose brown sugar could also work.

GROCERY STORE TIP: look for ripe strawberries that are red all the way through (from stem to tip), have a bright green tops, and no signs of mushy or moldy berries.

Helpful Tools:

  • Fine Mesh Sieve
  • Mason Jar / Glass Bottle

Find the full detailed instructions with measurements in the recipe card below, at the end of this post.

Step-by-Step Instructions

Here I share some step-by-step photos and detailed instructions for how to make a homemade strawberry simple syrup:

1

dissolve the sugar

Place a medium saucepan over medium heat and add the strawberries, water, and sugar. Stir until the sugar dissolves, then increase the heat to medium. Bring to a low boil for 1 minute.

2

simmer the syrup

Reduce heat to low and simmer for 20 minutes, stirring frequently.

As the strawberries begin to soften, mash with a potato masher or back of a wooden spoon.

3

strain the syrup

Remove from heat and cool for 5-10 minutes.

Then, place a fine mesh strainer over a heat-proof bowl, and strain the syrup.

While straining, mash the strawberries slightly.

Note: the harder you mash, the more bits of strawberry will come through.

Serving Suggestions

My absolute favorite way to use this strawberry syrup is in my Iced Strawberry Matcha Latte. But you can also make your own homemade strawberry lemonade or strawberry iced tea. Adding to your Cold Brew Latte is also a great idea!

That doesn’t stop me from enjoying it on ice cream, French toast, or as a strawberry pancake syrup.

How to Store Strawberry Syrup

Transfer the syrup into a glass jar with a lid and cool to room temperature.

Leftover strawberry syrup can be stored in a glass container in the fridge for 2 weeks.

Freeze: Freeze the leftover strawberries in a freezer-safe container or silicon ice cube tray for smoothies.

Thaw: Transfer to the fridge to thaw overnight before using.

Recipe Tips

  • Don’t mash too hard: If you want a super clean and smooth simple syrup, try not to mash the strawberry solids too hard or it will make the syrup cloudy.
  • Cool completely: The syrup will thicken slightly upon cooling and even more in the fridge. If you prefer a thicker syrup, reduce the water to 3/4 cup.
  • Save the fruit pulp as freezer jam: Use them as strawberry jam on toast or freeze for smoothies.

Recipe FAQs

How long will strawberry simple syrup last?

Strawberry syrup will last for 2 weeks when stored in an airtight container in the fridge.

How to make fruit infused syrup?

The key is to first bring the mixture to a boil, then simmer for at least 20 minutes so the fresh berry flavor infuses into the sugar water mixture.

What is the ratio for fruit syrup?

Plain simple syrup recipes are a 1:1 sugar to water mix. However, I like to reduce the sugar to 2/3 cup to account for the sweetness of the strawberries.

Can you make simple syrup with other fruits?

Absolutely! Swap out the strawberries for blueberries, blackberries, raspberries, peaches, or nectarines.
