Anyways. Okay, so I HAVE to share this quick little story with you guys. Since I’ve started reading You Are a Badass*, the whole “Law of Attraction” theory is stuck in my head. Jack Canfield also spoke of it at the IDEA World Convention opening ceremonies.
So my story starts out plain and simple. Drew and I decided to head downtown for some dinner. Our dinner convo was just random chatter. We started talking about Holland, Mi which then led us to start talking about Hope College (located in Holland). An average conversation, nothing fancy. Holland and Hope are significant in this story, so stick with me…
We leave.
We walk by someone who looked a lot like a friend I went to CMU with. I said to Drew, “Gosh that guy looked a lot like Darrin!” We chat about Darrin for a sec and keep walking…
We get stopped by a high school classmate we haven’t seen in I don’t know how long… We chat about being back in Michigan, etc. He introduces us to his wife, who he met at… Hope College. ^^ We were just talking about Hope at dinner.
We part ways and go home.
Drew and I get home and are about to start some Netflix (I know, we’re so cool). Not even 10 minutes go by since we’ve been home and I get a text… From none other than
DARRIN. The guy I literally thought I just 20 minutes ago. Well it wasn’t him I saw walking downtown, but his text said…
“I swear I just saw you riding your bike in downtown Holland!”
Um… say whhatttt?
I thought I saw Darrin. Darrin thought he saw me. We’re in two completely different cities, hours away from one another, yet somehow we both thought we saw each other.
Is that not WEIRD or WHAT? I can’t help but think the Universe is trying to tell me something…
Anyways 🙂 Let us chat about these mocha cereal protein bars now.
They are one of the easiest and quickest things I’ve made when it comes to homemade bars. Just FOUR ingredients, ONE BOWL, and maybe 15 minutes in the fridge to set the bars. EASY peasy lemon squeezy.
What you need
cocoa crisps cereal
mocha protein powder
brown rice syrup
nut/seed butter
Well then of course the optional chocolate topping, because that’s just how we roll around here.
Line a 8×8 or 9×9 square pan with parchment paper, leaving extra on the sides.
In a large bowl, combine cereal and protein powder. Add in brown rice syrup and nut or seed butter and mix until everything is full incorporated. Press mixture into prepared pan, working into all four corners.
Place pan in fridge and allow bars to set for about 20 minutes. Cut bars into 16 squares and top with chocolate if using. Enjoy!
Notes
*You can sub whey protein powder with chocolate vegan protein and add 1 TBS of instant coffee powder to make vegan. Or a mocha vegan protein powder.
-Bars will keep best in fridge but can be enjoyed at room temperature.

Wow I can’t think of anything like that that’s happened to me yet! So cool 🙂 in the eighth grade I did have a dream about a crush who had been away for the semester skiing (junior olympics nbd) and the coincidentally he was back the next day. Not similar? Didn’t think so ?
