My husband (Drew) is the biggest cookie fiend I know. When there are fresh baked cookies out, I try not to count how many he has consumed at once. I’m sure if I weren’t “watching” he would easily eat an entire tray. Apparently he has eaten an entire box of Oreos in one sitting when he was in high school. It doesn’t surprise me…
Anyways, Drew’s birthday is this week and I always like to make him a birthday treat (along with the countless other treats I’ve made this week… naturally).
Last year I made him this peanut butter pie, except he didn’t know it was vegan, until maybe now… Hi! 😀
This year I thought I’d be nice and make him something that would be sure to go over well.
A CHOCOLATE CHIP SKILLET COOKIE
You know by now that with my baked goods I like to “healthify” them. I like using different flours, swapping sweeteners, using coconut oil instead of butter, etc.
But when Drew wants a cookie, he just wants a straight up, plain ole chocolate chip cookie. I can’t tell you how many times I’ve made chocolate chip cookies and he suspects I have added flaxseed, didn’t use butter, or even added something as simple as cinnamon. More often than not I suppose I have done one of those things… The guy is not easy to trick when it comes to cookies!
So for this skillet cookie recipe, I kept it simple and fairly traditional… for the most part 😀
Here’s what you need
whole wheat white flour
sugar
butter
egg
vanilla
baking soda
salt
chocolate

The batter comes together super easy and all that’s left to do is bake in your baby skillet!
And then we top with ice cream, of course.
Drew’s favorite ice cream is cookie dough (who would have thought) so yes, we are celebrating with a chocolate chip cookie AND chocolate chip cookie dough ice cream.
Preheat oven to 350F and grease a mini 6″ cast iron skillet well with butter or oil, set aside.
In a medium bowl stir together melted butter and sugars until well combined. Add in egg and vanilla and stir until evenly mixed.
Stir in flour, baking soda, and salt and mix well. Batter will not be like traditional cookie dough, it will feel more like cake batter. Add in chocolate chips, then pour batter into grease skillet.
Bake for 15-18 minutes, until edges are slightly browned.
Serve with favorite ice cream and share with your loved one! (Or keep it to yourself, no judgement.)
*you may use coconut oil in place of butter to make dairy-free, or avocado oil as well. Because the cookie dough is contained in the skillet, no need to worry about spreading.
*whole wheat white flour does give the cookie a slightly bread-like texture compared to traditional all-purpose flour. You may be sub with 3 TBS whole wheat + 3 TBS unbleached all-purpose. Or you could also do 1/2 cup unbleached all-purpose. The texture of the cookie will change slightly depending on which flour you decide on.recipe adapted from here
Also, I can’t sit here and talk to you about this skillet cookie and Drew’s birthday without at least mentioning how much I love the guy. That should be a given, considering we’re married. But I just am so thankful for him and his support lately. He is an amazing husband <3

We are big on special birthday desserts. Each year for our birthday we pick our birthday dessert of the year – last year Jesse had pumpkin pie and this year he wanted a “Matilda chocolate cake” – basically the chocolatiest chocolate cake you can think of 😛
Oh I love this! We just celebrated my husband’s birthday this week with whoopie pies. He’s also a big chocolate chip cookie guy and can’t stand it when I modify them to be moderately healthy. Oh well, the things we do for the ones we love. Like eat regular cookies with them.

Yes, birthday treats for every family member! I’ve never done a skillet cookie and I’m sooo tempted now. And your husband Drew sounds like my son Drew in the sense they have for sneaky ingredients. Not easy to fool! Happy birthday to Drew!
Why are mini skillets so cute?! Gah, I can’t get over it! I bought a 10 inch one for desserts (for 2) and I still think it’s a little too big. My husband didn’t have a sweet tooth at all when we first started dating and now after 6 years, my incredibly strong sweet tooth has rubbed off on him! This looks amazing, obvi. And happy birthday to Drew!
Oh yeah a 10″ would be pretty big! Even the 6″ is probably more accurate for 2 servings, depending on what kind of ingredients used. And that is so funny about your husband.

Omg. I Need this. Drew and I are on the same page. Chocolate chip cookies are my favorite and for awhile I was on a mission to find the best ones in the city (it’s ongoing). I want to make this in my regular sized cast iron skillet.
Lol yes, you and Drew are DEF on the same page then. You know, I bet you could actually about double the recipe for a 9-10″ skillet and you might yield similar results! I’ll have to test that out next time. Drew would appreciate having more cookies anyway 😉
Ugh, I hate to say I’ve done the whole-bag-of-Oreos thing on multiple occasions. So… I guess I’m a bit of a cookie monster too 😉 My favorite dessert is actually a skillet cookie just like this, but it also has Reese’s cups pressed into the top and melty ice cream piled on. Freaking delicious. Anyway, that obviously means this looks incredible to me. The perfect birthday treat! Happy (almost) birthday to Drew!
I don’t have a boyfriend, so I don’t have to worry about a picky partner! However, I do have a bunch of sisters and a picky daddy, so it’s hard to please them when it comes to baking! I do make the super healthy recipes for them from my blog, so they like those for sure!
This is so perfect! Seriously drooling over this cookie right now. I would totally top it off with the cookie dough ice cream too! 😉 Whenever I make something and bring it home to my family they ALWAYS question whether there is avocado in it because they know just how much avocado I eat that naturally I would include it in a recipe haha.
