How to Make Chocolate Covered Strawberry Ghosts
Let’s dive into how to create these ghoulishly good strawberry ghosts that are sure to be a hit at any Halloween gathering.
Gather Ingredients:
Gather strawberries, white chocolate and tools so you’re ready to go.
Make sure strawberries are washed and completely dry – option to keep the green cap.
Make strawberry ghosts:
- Melt white chocolate and coconut oil in a saucepan over low heat, stirring frequently. If opting to use a microwave, use half power in 15 second increments until fully melted. Make sure to stir in between.
- Dip the strawberries into the bowl of white chocolate and place on prepared baking sheet. Repeat with the remaining strawberries.
- Melt the dark chocolate in a small microwave-safe bowl in 10 second increments stirring in between until fully melted.
- Once white chocolate has dried, dip toothpick into dark chocolate and dot on eyes and mouth. Let dry completely, about 15-20 minutes.

Tips for Chocolate Covered Strawberries
- Use Room Temperature Strawberries: Before dipping, make sure your strawberries are dry and at room temperature. Cold strawberries can cause the chocolate to seize or create condensation, which affects how the chocolate sets.
- Melt White Chocolate Slowly: I like to melt white chocolate on the stovetop on low heat, while watching carefully. You can also use a double boiler for more control over the melting process. I don’t typically recommend using the microwave for melting white chocolate, but if you go that route, be sure to melt on half power and stir every 15-20 seconds.
- Make sure white chocolate is set before adding dark chocolate eyes. If the white chocolate has not set completely, the dark chocolate will melt into the white.
- Allow Proper Drying Time: Place the dipped strawberries on a parchment-lined baking sheet and let them sit at room temperature or, in the fridge for about 15-20 minutes. This ensures the chocolate will set perfectly and stay intact when served.

How to Store Chocolate Covered Strawberries
Use an Airtight Container: Place the strawberries in a single layer in an airtight container to prevent moisture from making the chocolate soggy or sticky. Avoid stacking them to prevent smudging the decorations.
Refrigerate: Store the container in the refrigerator to keep the strawberries fresh and the chocolate firm. They can last up to 1-2 days in the fridge, but it’s best to eat them within 24 hours for maximum freshness.
