Why You Should Make This Recipe

  • No fuss, easy recipe for the whole family.
  • Deliciously healthy kid-friendly treat (but adults love them too!).
  • No special equipment required!
  • The fresh summer berries add a great pop of color and nutrients.
  • Rich, creamy, and a healthy snack to cool you down during these hot summer days!

4 Main Ingredients

The Greek yogurt base for these frozen Greek yogurt bars is made with the following 4 simple ingredients. These are like copycat Yasso bars, but with all healthy ingredients. We will need:

  • Greek yogurt – use your favorite yogurt here, whether that’s plain Greek yogurt, vanilla Greek yogurt, Skyr or any one of the dairy-free yogurts, such as coconut yogurt or cashew milk yogurt. Full-fat Greek yogurt will provide a higher protein content and the best texture when compared to regular yogurt.
  • Honey – raw honey compliments the tangy yogurt, but you can use pure maple syrup if you prefer. The maple syrup also makes it vegan friendly when made with dairy-free yogurt.
  • Nut butter – I love rich and creamy cashew butter, but almond butter, natural peanut butter, and sunflower seed butter all work.
  • Vanilla – use vanilla bean powder for beautiful specks of vanilla bean throughout the Greek yogurt ice cream bars. Feel free to use a splash of vanilla extract instead.

Optional Add-In’s & Toppings

  • protein powder (optional) – if you want to increase the protein content, add up to 3 tablespoons of your favorite protein powder.
  • chocolate drizzle – give these beauties a final finish with chocolate. Use your favorite type of chocolate chips, whether that’s dark chocolate, milk chocolate, or white chocolate. The coconut oil helps to create that magic shell texture.

How to Pick Berries at the Store

Adding berries is always a good idea in my book! It’s an easy way to add vitamins, minerals, and fiber to these frozen yogurt bars by mixing and matching your favorite berries.

When at the store, here are my best tips when picking out berries:

  • For fresh strawberries: Look for fresh green tops, glossy sheen, and a firm, plump appearance.
  • For blueberries: They should have an even dark blue color, smooth skin, and no signs of moldy, mushy, wrinkled berries. Also make sure to sort through for any lingering stems.
  • For raspberries: Raspberries should be plump, dry, and smooth, with no signs of mushy berries or excess moisture.
  • For blackberries: Blackberries should be a deep purple, with a plump appearance and no signs of moisture in the absorbent pad.

How to Make Frozen Yogurt Bars

Healthy yogurt bars come together in a few easy steps. The hardest part is waiting for them to freeze solid. Here are the step-by-step instructions:

Prepare Fruit

Wash and dry all the berries, then slice the strawberries, raspberries, and blackberries. Set aside on cutting board.

Make Yogurt Mixture

Line a medium or small baking sheet with parchment paper or wax paper.

In a medium bowl, mix together Greek yogurt or Skyr yogurt with raw honey, cashew butter, and vanilla powder with a rubber spatula until well combined.

Scoop and Spread

Scoop about 3 tablespoons of the mixture onto the lined baking sheet (I use a medium cookie scoop). Spread into an even layer, if necessary.

Gently place berries on top of yogurt, placing berries as desired.

EXTRA TOPPINGS: Feel free to top with any additional toppings, such as coconut flakes, slivered almonds, walnuts, or pistachios.

Freeze

Place popsicle stick into yogurt. Transfer the yogurt pops to the freezer. Freeze for at least 4 hours, or until completely set and the berries are frosty.

Finish with Chocolate Drizzle (optional)

While the yogurt bars are still in the freezer (but almost ready), melt dark chocolate chips and coconut oil in a microwave-safe bowl in 30 second increments, stirring each time in between.

Once the chocolate is fully melted, remove the baking tray from the freezer and drizzle on chocolate.

TIP: If you’d like to cover the bar completely with chocolate, double the chocolate drizzle and spoon the melted chocolate over entire frozen yogurt bar. The chocolate will set in a few minutes and they are ready to eat.

Alternative Methods

Depending on your desired outcome, you can also use this Greek yogurt bars recipe to make a frozen yogurt bark recipe or a frozen popsicle recipe. Here’s how to do each one:

Frozen Yogurt Bark: Prepare the berries and yogurt mixture as instructed. Rather than portioning out the yogurt mix in dollops, spread it into about 1/2 – 1-inch layer on the lined baking sheet. Top with berries and freeze for at least 2 hours. Drizzle with chocolate, if desired. Break into small pieces and enjoy!

Popsicle Mold: While there is no popsicle mold needed, you can make them all the same size with this Popsicle Mold. Fill each mold 3/4 full, cover, and freeze for 4 hours. Drizzle the yogurt popsicles with chocolate, if using.

Serving Suggestions

Serve them as breakfast, an after-school snack, or even dessert any night of the week. They are especially handy for kids birthday parties or special occasions, too!

Nothing says a healthy, kid-friendly dessert more than these frozen yogurt ice cream bars. I love to prepare a batch and have them in the freezer any time my kids need a sweet treat. But trust me, this satisfies the kid in all of us!

How to Store

Leftover frozen yogurt bars can be stored on the same parchment paper lined baking sheet, tightly covered with foil.

Or, transfer the popsicles to a freezer-safe plastic bag or airtight container. Freeze for 1-2 months.
