Where my savory breakfast lovers at!? Guys, this sandwich has been happening over and over again over the past month and I decided it’s about time I share this with you. I feel a little silly sharing such a recipe with you… I’m not sure it even feels like a recipe. But it is a damn good sandwich that everyone on the world wide web needs to know about, so hence the reason for posting.

I’m not sure about you all but I am almost always a savory breakfast person. Especially when going out to eat. My eyes scope out the egg breakfasts first… and then if I see something with avocado I’m pretty much sold.

Oh, speaking of avocado… Forgot to put that heavenly green stuff on this breakfast sandwich the first time I photographed it. And it wasn’t like I could go back and add the avocado after the fact and re-shoot…. Because I had already eaten in.

Yup. There I was enjoying my breakfast sandwich but thinking, “Hhmmm something is just not right here in this situation…” And then it hit me and I yelled the F word with my mouth full of this breakfast sandwich sans the avo. *eyeroll*

I was telling Drew this story and I don’t think he quite understood why forgetting the avocado was so terrible. He just kept saying “Well why couldn’t you have just changed the recipe to not have avocado?” 

My actual response to him: What??? Because I would never NOT put avocado on a breakfast sandwich. That is just absolutely ludicrous.

I’m sure he proceeded to call me crazy but hey, what else is new?

Avocado Black Bean Breakfast Sandwich

what you need

  • kale
  • avocado
  • black beans
  • egg
  • feta
  • bread

Ways to make it your own

-Use spinach for your greens if you prefer over kale, or leave out the greens entirely. I just prefer the taste and texture of kale over spinach when it comes to my eggs.

-Swap out the feta for goat cheese, or trade in for nutritional yeast if dairy-free.

-I used these ready made black beans from Better Beans. But you can also mash up canned or cooked black beans.

-Use your favorite bread, english muffin, or even a wrap! I used sprouted lentil grain bread from One Degree which has 6 grams of protein per slice, so this breakfast sandwich is seriously an awesome meal!

Ingredients

  • favorite bread, sprouted, sourdough, english muffin, wrap
  • oil
  • handful greens, kale or spinach
  • salt & pepper to taste
  • 1 large egg
  • 2 heaping tablespoons mashed black beans
  • 2 heaping tablespoons mashed avocado
  • 1 TBS crumbled feta, optional

Instructions

  • Put your choice of bread in toaster on preferred setting.
  • On medium heat, sauté greens in frying pan with a little bit of oil, and salt and pepper if you wish. Cook greens until wilted down, or cook longer until slightly crispy. Transfer to plate.
  • Cook egg on low-medium heat until egg white is fully cooked but yolk is soft, or cook to your liking, then remove from heat.
  • On one piece of toast spread on black beans and top with kale. On other piece of toast spread on mashed avocado and top with feta. Gently transfer cooked egg on top of black bean toast and place the avocado toast on top to make your sandwich.
  • Using sharp knife, gently cut sandwich in half, and enjoy!

      It’s best to freeze the sandwiches without avocado but you can assemble and freeze, then serve with fresh guac or avocado.

    YEEES! This sandwich is perfection!!

    Why would anyone have a sandwich without avocado?! I get you! 😀 (The only reason why is if you don’t have any at home :-(( )

    I used to love sweet breakfasts (pancakes, French toasts, overnight oats, etc.) but lately (for the past half year or so) I’ve been craving savoury breakfasts. I just made a quite similar sandwich this weekend:that I loved so much it will be a regular feature at our weekend brunch 😉

    It’s so weird, because I’m almost always a sweet girl for breakfast (not ‘sweet’ always in personality.), but I love sweet food. However if we have breakfast for dinner, I love things with eggs. This sandwich looks so perfect and hearty and full of deliciousness. You got the yolk just perfect.

    This breakfast sandwich is my definition of the perfect breakfast! I cannot wait to make it! We are serious brinner lovers in our house, so it might make an appearance on our dinner table tonight! I am with you on the avocado front too: why wouldn’t you want it on EVERY SINGLE BREAKFAST SANDWICH from here to eternity. Boys don’t understand.

    this is so simple and so perfect! I agree that avocado is a MUST and should always be included haha. I’m usually a sweet breakfast person but once and a while I like my eggs, with avocado of course 🙂

    Oh my gawwwwd that egg yolk though!!! I’m weird with breakfast…at home it HAS to be sweet (oats or pancakes) but when I go out for breakfast or brunch it HAS to be savory (eggs and things)! This breakfast sandwich is totally calling my name though.
