Rainbow fruit skewers

Gather equipment. Wash and dry all of the fruit, then gather together along with a cutting board, bamboo skewers and a baking sheet or dish to place the finished skewers.

Prep fruit. Prep the strawberries, pineapple and kiwi by slicing into about 1 “ thickness so that they do not fall off of the skewers.

Assemble skewers.  Gently slide berries and fruit onto skewers, alternating the berries with the pineapple chunks and kiwi. Be creative as you like here!  Continue until you’ve made the desired amount of skewers, or until all the fruit runs out.

Melt chocolate. Add the chocolate chips and coconut oil to a microwave-safe bowl. Microwave on half power in 30 second increments, stirring in between until melted.  Drizzle over the skewers and place in the fridge to chill.

Make yogurt dip.  In a small bowl, mix together yogurt with honey. Keep chilled in the fridge until ready to serve.

Serve.  Colorful fruit skewers add that special pop to any dessert table.  Some of my favorite ways to serve these beauties are at outdoor summer parties, special occasions, or just because!

Skewers can be assembled 1 day in advance if drizzling with the melted chocolate.  Plain fruit skewers will hold their integrity in an airtight container or on a plate tented with plastic wrap in the fridge for up to 3 days.
