Print Recipe
- 1 pound strawberries hulled (about 2 cups)
- ½ tablespoon lemon juice
- 1-2 tablespoons maple syrup or sugar of choice
- 2 tablespoons chia seeds
Wash strawberries and hull green tops.
In a small saucepan, add strawberries, lemon juice and maple syrup. Cook over medium-high heat for about 5-8 minutes, allowing the juices to release. Begin mashing berries to the desired consistency.
Remove from heat and add in chia seeds. Stir until combined. Allow the strawberries to sit for 10 minutes, until the chia seeds have absorbed the excess liquid and a jammy consistency has formed.
Allow to cool completely before storing.
STORAGE - Jam will keep in an airtight container or mason jar for up to 1 week in the fridge.
