Ingredients

  • 1 pound strawberries hulled (about 2 cups)
  • ½ tablespoon lemon juice
  • 1-2 tablespoons maple syrup or sugar of choice
  • 2 tablespoons chia seeds

Instructions

  • Wash strawberries and hull green tops.
  • In a small saucepan, add strawberries, lemon juice and maple syrup. Cook over medium-high heat for about 5-8 minutes, allowing the juices to release. Begin mashing berries to the desired consistency.
  • Remove from heat and add in chia seeds. Stir until combined. Allow the strawberries to sit for 10 minutes, until the chia seeds have absorbed the excess liquid and a jammy consistency has formed.
  • Allow to cool completely before storing.
