Learn how to make chocolate covered blueberries in two easy steps with three ingredients. You just need chocolate, coconut oil, blueberries, and a mini muffin pan. This healthy snack is ready in 30 minutes and the perfect little treat.
Prepare blueberries: Wash and dry blueberries, make sure they are completely dry by rolling them between tea towels and transferring to a clean, dry surface.
Melt chocolate: Add chocolate to a medium microwave safe bowl. Microwave on 50% (half) power, for 1 minute. Add coconut oil and microwave again on half power for another minute. Stir well and melt on half power in 30-45 second intervals, stirring in between until fully melted.
Assemble: Using a mini muffin pan, add about 4 blueberries to each muffin cup. Fill each cup with about ½ tablespoon of melted chocolate. Once all the chocolate has been used, garnish with flaked sea salt, freeze dried blueberries, etc.
Chill: Place pan in fridge and allow the chocolate to set, about 30 minutes.
Storing: Enjoy these bite sized snacks and store in the fridge for up to 2 days. Store in the freezer in an airtight container for up to 2 weeks.
