This Kale Butternut Squash Salad is the perfect holiday side salad, but also great all season long for meal prep too. Massaged kale, roasted butternut squash, cranberries and farro pair wonderfully with a sweet onion vinaigrette. 

What You Need

For this fall kale salad you need kale, butternut squash, farro. feta, dried cranberries. pepitas, and a few simple dressing ingredients.

Cube butternut squash and toss the squash in olive oil. Sprinkle with salt and roast at 375ºF for about 20 minutes.

Step One

Prepare farro, massage a little olive oil into kale and gather salad ingredients.

Step Two

Make onion vinaigrette and toss with the salad, adding pepitas, cranberries and feta.
