Blackberry Hand Pies are the perfect personal treat! Using a simple homemade pie dough plus quick & easy blackberry jam, these little hand pies are going to be your new favorite.
What You Need
For these hand pies you need flour, sugar, salt, frozen butter, water, apple cider vinegar, blackberries, maple syrup, lemon juice, tapioca flour, egg, milk, and sprinkling sugar.
In a food processor pulse together flour, salt and granulated sugar. Add in frozen cubed butter and pulse until broken down.
Step One
Add in ice cold water + ACV mixture, 1 tablespoon at a time, pulsing in between until dough comes together (about 5-6 tablespoons of water).
Step Two
Dough should come together and not be overly wet. Split dough into two even round discs; place in fridge for 1 hour.
Step Three
In a saucepan over medium heat, add blackberries and cook down until soft and juices. Mash berries, add in maple syrup, lemon juice and tapioca flour.
Step Four
Continue cooking over low-medium heat while stirring, for a few more minutes, until blackberries have thickened.
Step Five
Place dough on a lightly floured surface and begin rolling the dough flat. Use a biscuit cutter to cut out your pie rounds. You’ll need 16 rounds to get 8 pies.
Step Six
On a large baking sheet evenly space out 8 rounds and place about 1 tablespoon of blackberry jam into the center.
Step Seven
Place the top rounds on and gently press the edges together to secure. Crimp edges with a fork. Chill in freezer for at 15-20 minutes.
Step Eight
After the pies have chilled, brush on your egg wash and sprinkle with coarse sugar for the ultimate hand pie experience.
Step Nine
Bake at 375°F for about 25-30 minutes, until edges are golden. Let hand pies cool for 20 minutes before diving in!
