A smash cake is a small cake meant to be smashed into by your little one – it’s not really for serving a crowd. It makes for a great photo opp!

ingredients
Combine wet ingredients. First add in all of the wet ingredients: well mashed banana, egg, oil, vanilla and milk.

Add dry ingredients. Then add in dry ingredients: oat flour, baking powder, and a pinch of salt.

Combine. Stir wet and dry ingredients to combine until the batter is smooth.

Place batter in pan. Evenly distribute the batter into two, 4″ round cake pans, filling halfway full for each pan.

Cool cake. Allow the cakes to cool completely before frosting. You can also make the cakes one day in advance.

Decorate cake. Place cake on cake stand or plate, add a couple of tablespoons of whipped cream on first layer, top with second layer and frost rest of cake.

Coconut Whipped Cream – You need one (14 ounce) can of canned coconut milk, chilled for at least 6 hours.Yogurt Frosting – To make a yogurt frosting, use a thicker yogurt so you don’t have to strain it. Greek yogurt or Skyr works great here.

Chill the cake between each layer of frosting so the cakeis easier to frost. Add about2 tablespoons of whipped coconut cream onto the first layer, add the second layer, and place in the fridge for15 minutes.

If you’d like a 4 tiered cake, make 2 batches of cakes. Or use double recipe and use 4, 4″ round cake pans. Be sure to use wooden skewer down the center of the cake to prevent the layers from shifting.
