Combine wet ingredients. In a large bowl mix oil, cashew butter, maple syrup and brown sugar. Add in eggs and vanilla, mixing until evenly combined.
Add dry ingredients. Fold in dry ingredients to bowl of wet ingredients until almost combined.
Add s'mores ingredients. Fold in marshmallows, graham crackers and chocolate chunks.
Bake bars. Transfer cookie dough into pan and press evenly into all four corners. Bake at 350ºF fo 18-22 minutes, until golden.
Cool and slice. Allow the pan to cool for at least 45 minutes before removing the cookie bar from the pan and cutting into squares.
