No Bake S’mores Bars

No fire needed for these s’mores! What You Need

For these no bake smores  you need graham crackers, medjool dates, cinnamon, cashew butter, chocolate chips, and mini marshmallows.

Combine the graham crackers, cinnamon, medjool dates and cashew butter together in a food processor. Process until the mixture is sticky.

Make Crust

Press the mixture into a prepared 8×8 pan. Place in  the fridge while you move onto the next step.

Press Into Pan

Melt the chocolate and  nut butter. Then pour the melted chocolate onto the chilled crust layer.

Spread Chocolate

Add Marshmallows

While the chocolate layer  is setting, top with mini marshmallows. Pop in  the freezer to set.

Toast Marshmallows

Broiling or torching the marshmallows is an optional step but definitely gives the s’mores bars a more “authentic” feel.


Place the bars back in the fridge or freezer. You want the chocolate to be set but not rock hard that you’ll crack the bars when you cut into them.

Once the bars have fully set, lift the bars out of the pan using the parchment paper, place on cutting board and use a large sharp knife to cut into squares.


These s’mores bars will keep in the fridge for about 7-10 days (if they last that long!)
