What You Need
For these bars you need medjool dates, peanut butter, coconut oil or butter, milk, brown rice flake cereal, butterscotch chips, and dark chocolate chips.
Process dates into paste – add milk as needed. Add peanut butter and coconut oil (or butter) and process until smooth.
Step One
Transfer to stovetop to melt down the peanut butter-date mixture – this also helps in the last step. Combine cereal and transfer to greased pan.
Step Two
Add butterscotch and dark chocolate chips to top of bars and cover with foil to help melt the chips faster
Step Three
Once chips have melted, smooth top with spatula. Allow to set at room temperature for an hour before cutting.
