You are going to LOVE these Almond Flour Blueberry Muffins! They’re so easy to make, healthy and flavorful, but not too sweet. Such a simple blueberry muffin recipe that  kids and adults both love!

What You Need

For this health blueberry muffins you need almond flour, tapioca flour, baking soda, salt, maple syrup or honey, eggs, oil, vanilla, milk, apple cider vinegar and blueberries.

In large bowl whisk together oil, maple syrup, vanilla, milk and apple cider vinegar. Add in eggs – whisk until combined.

Step One

Add dry ingredients to bowl of wet, and as mixture comes together, fold in blueberries.

Step Two

Evenly distribute batter into 12-cup muffin pan. Top with more blueberries and almond slices if you’d like.

Step Three

Bake muffins at 350ºF for 18-22 minutes, or until inserted toothpick comes out clean.

Step Four

These almond flour blueberry muffins are some of the best healthy muffins I’ve ever made!

STORAGE

Muffins will keep at room temperature in airtight container about 3 days. Or place covered in fridge about 4-5 days.
