The energy at BlogFest and IDEA World was incredible. It was my first time attending a conference like that and it reaffirmed why I started doing what I’m doing <— that being sharing healthy recipes with you all and inspiring an active lifestyle.
Our BlogFest keynote speaker was Jenna Wolfe. I always enjoyed watching her on the Today Show, but seeing her speak in person made me fall in love all over again. She was down to earth, funny, relatable, and seriously inspiring. We were all laughing (and possibly crying) throughout the speech. Seriously though I was holding back tears.

life is not a dress rehearsal
Life is not waiting for us to go through the all of the steps. We don’t get rehearsals before the big show. This IS the big show. Your life RIGHT NOW, is the show.
If you want something you’ve never had, you have to do something you’ve never done.
Sounds pretty obvious, right?
Do something every day that scares you
This one may be a bit more challenging. It may require to you make a list of things you WANT to do, and then take note of the things that you keep putting off because they seem out of reach, or “scary”. I certainly could make use of this right now.
Listen to YOU
With all of the podcasts, blog posts, articles, etc. etc. available to us day in and day out, it’s easy to get caught up with what we “should” be doing. Some people say less is more, while others say you have to do it all.
Hustle hustle hustle.
Wait… slow down.
But what about listening to yourself? Don’t YOU know what’s best for YOU? Maybe you’re listening to podcasts and reading self-help books to try and figure it out… But don’t forget to look within and see if you can answer some of your own questions.
You may not know where you’re going
And that is okay! Embrace it. Jenna was super honest and real about leaving the Today show to start her own career. The fact that even she, as someone who is super successful, still doesn’t know exactly where she is going, can be comforting to all of us “normal” folk. The truth is none us truly KNOW where we’re going. The only thing we can do is to live each day as purposeful as possible in hopes of getting to where we WANT to go. Where we PLAN to go. Again, if you want something you’ve never had you have to do something you’ve never done.
So what’s on today’s blog food menu? Chia seed protein pudding, featuring Vital Proteins.

What you need
chia seeds
collagen peptides
favorite yogurt (dairy-free, greek, regular will all work)
favorite non-dairy milk
fresh strawberries
It’s funny… I used to make chia seed pudding ALL of the time as a snack. Especially as a mid-morning snack at the office. Somehow it got away from me. But when I was thinking up some ways to sneak some collagen into daily snacks, chia seed pudding made perfect sense.
It’s super easy and really requires such little prep. All you have to do is mix up all of the ingredients and let the mixture thicken for about 4-6 hours (or overnight). Then you have a healthy, satisfying snack all ready to go!
Strawberry Chia Seed Protein Pudding [ with Collagen Peptides ]
- Prep Time: 4 hours
- Total Time: 4 hours
- Yield: 2 1x
Ingredients
- 2/3 cup non-dairy milk
- 2 scoops collagen peptides
- 1/4 cup favorite yogurt* (regular, greek, dairy-free)
- 1/4 cup chia seeds
- 1/2 cup chopped strawberries
Instructions
- In a 16oz jar, combine milk and peptides first until peptides dissolve**. Then stir in the remaining ingredients. Cover with lid and shake until well combined. Stir together one more time and top with more strawberries if you wish, before placing lid back on and storing in fridge. Allow mixture to thicken at least 4 hours, or overnight.
Notes
*I used a lightly sweetened vanilla skyr yogurt. If using unsweetened yogurt and/or milk, you may want to add a hint of sweetener like maple syrup, honey, or stevia.
**Make sure peptides and milk are combined first before adding the rest of the ingredients to ensure there are no clumps.
Store leftovers in fridge and use within 1-3 days.

I especially loved Jenna’s advice: if you want something you’ve never had you have to do something you’ve never done.-> it makes complete sense and yet until now I ‘ve never seen it like that.
It is also very reassuring that even later, as someone very successful she still doesn’t exactly know where she’s going. This stuff tends to stress me out that I have no clear idea, that I don’t see the picture, guess I’m just the kind of girl who should forget about that and just keep on going forward or sideways, wherever those steps are leading.
Unfortunately I rather tend to do the second: get all the info, articles, notes together, stress myself I haven’t read them all, and then be confused and stressed since I should be doing so many things all at once.. I’m working on changing this and trying not to stress (and then resent) myself unnecessarily.

Stella thanks so much for sharing your thoughts 🙂 I am like that too though, always wanting to know what is going on, have a plan, priorities, know the end goal, etc. I’ve been realizing recently though how much better it feels to try and just live in the moment. That’s really all you can do though. Yes it is good to think about big picture, but stressing about the future will get you no where if you can’t focus on the day that you’re in. It’s a fine balance of course!

I’ve been into podcasts too! I love listening to them on long car rides–they’re like pouring knowledge without effort! Anyways, this chia seed pudding looks fabulous! I’d LOVE to try it out!
