Fine, that was a little dramatic but homemade chocolate treats tend to do that to me. I can’t help but swoon over all things chocolate. Sometimes I think there might be something wrong with me… but then I’m all like “Nah, chocolate is amazing. This is completely normal.”
I’m sure I’ve said this before but I 200% do not understand when someone says they’re “not a chocolate person”. Exsqueeze me? <– sorry I’ve been binge watching The Mindy Project lately.

A weird person, that’s what… I should probably say I am kidding after that statement buuutttt then I’d be lying… So yup, moving on. Hopefully all of you here love chocolate as much as I do and you’re still with me.
So what exactly is this magical creation we’re talking about today? PALEO CHOCOLATE BARK with GRAIN-FREE GRANOLA.
This dessert takes just five ingredients total and made with all the good-for-you stuff.
CACAO POWDER – antioxidants, phytonutrients, a good source of magnesium.
EXTRA VIRGIN COCONUT OIL – healthy saturated fats, medium chain fatty acids (MCT’s)
RAW HONEY – natural energy source
VANILLA EXTRACT
PALEO PASSION FOODS GRAINLESS GRANOLA
The process is also ridiculously simple. All you have to do is melt the coconut oil, cacao powder, honey and vanilla in a small sauce pan until fully combined. Then you transfer the mixture to a lined pan (or a silicone one like I used), top with the granola, and transfer the pan to the freezer for the chocolate to set. In about 30 minutes you’ll have healthy paleo chocolate bark ready to devour.
I love the added crunchy texture you get from the grain-free granola too. It’s kind of a must.

Paleo Chocolate Bark with Grain-Free Granola
- Prep Time: 5 mins
- Cook Time: 30 mins

Ingredients
- 1/2 cup extra virgin coconut oil
- 1/2 cup cacao powder(or unsweetened cocoa powder)
- 3 TBS raw honey (or maple syrup)
- 2 tsp vanilla extract
- about 1/3 cup Paleo Passion Foods Grainless Granola
Instructions
- Line a 8×8 square pan with plastic wrap or parchment paper, OR lightly grease a silicone square pan and set on baking sheet. Set aside.
- Over low-medium heat in a small saucepan add coconut oil and cacao powder until fully melted and cacao is combined. Gently stir in honey until combined. Remove from heat and stir in vanilla extract.
- Pour chocolate mixture into prepared pan and top with grain-free granola (I used about a 1/3 cup of chunks, and broke apart to sprinkle on).
- Transfer pan to freezer and allow chocolate to set, about 30 minutes. Once chocolate has set, remove from pan and break into bark pieces. Enjoy!
Notes
Paleo chocolate bark should be stored in freezer, due to the melting temperature of coconut oil. The chocolate will still be soft enough to enjoy frozen.
