Cherry Chipotle BBQ Pulled Pork Lettuce Wraps (or sliders!)

If you’re looking for a new way to make pulled pork, look no further than Cherry Chipotle BBQ Pulled Pork – serve it with lettuce wraps or buns for a delicious meal. Paleo-friendly.

Ingredients

Pulled Pork

  • 1lb pork tenderloin from Butcher Box (you can also do a fattier cut like pork shoulder, but I like the tenderloin)
  • onion powder
  • paprka
  • salt & pepper
  • 1 TBSP oil (I like avocado oil)

 

cherry chipotle BBQ sauce

  • 1/3 cup beer or stock (or water)
  • 2/3 cup ketchup
  • 1/3 cup cherry preserves
  • 1 TBSP lemon juice or apple cider vinegar
  • 2 TBSP molasses
  • 1/4 cup honey
  • 2 TBSP dijon mustard
  • 1 TBSP coconut aminos (or sub tamari)
  • tsp liquid smoke (can omit)
  • 2 large garlic cloves, minced
  • 1 TBSP adobo sauce
  • 1 tsp onion powder
  • 1/2 tsp paprika

Easy Lime Cabbage Carrot Slaw

  • 1 cup shredded carrots
  • 1 cup shredded purple cabbage
  • 1 cup shredded napa or green cabbage
  • juice of 1 lime
  • 2 TBSP avocado or extra virgin olive oil
  • 1 TBSP apple cider vinegar
  • 1/2 TBSP honey or agave

for serving

  • butter lettuce
  • sliders
  • sliced avocado

Instructions

Prepare the pulled pork (Instant Pot Directions)

Sprinkle on onion powder, paprika, plus salt and pepper onto both sides of pork. Using the Instant Pot, add about 1 tablespoon oil to pot and first use sauté mode to sear pork on both sides. Then turn pot to manual mode, add 1 cup of liquid (beer or stock), close lid making sure valve is sealed; cook on manual (high pressure) for 15 minutes and naturally release. See notes for crockpot cooking.

Meanwhile prepare the BBQ sauce: In a medium pot over medium-high heat, combine ketchup, cherry preserves, beer (or water), apple cider vinegar, molasses, honey, dijon mustard, coconut aminos (or tamari) liquid smoke (if you have it), garlic cloves, adobo sauce, onion powder and paprika. Use whisk to combine and allow mixture to come to a quick boil, then turn heat down and simmer about 30 minutes, or until sauce has thickened. Remove from heat when done – you can also make this ahead of time and store in covered jar in fridge.

Make the slaw

combine all ingredients in a bowl, tossing to coat.

assemble the lettuce wraps or sliders

Layer on slaw, cherry chipotle bbq pulled pork, and avocado on buns or lettuce leaves. Enjoy!

Recipes Notes:

SLOW COOKER METHOD for PORK: Option to sear seasoned pork in skillet over medium heat first, or place directly in slow cooker. Add 1 cup of liquid to slow cooker with seasoned pork and cook on low for about 4 hours. Depending on how much pork you use (I only have 1lb) you may need more time to cook.
