Avocado Mint Smoothie

A creamy Avocado Mint Chocolate Chip Smoothie loaded with nutrient dense foods like avocado, cauliflower and spinach! It’s so refreshing and a great way to start the day. Just like a healthy shamrock shake! Vegan and paleo friendly.

Ingredients

  • 1/2 small avocado
  • 1/2 cup frozen cauliflower rice
  • 1 handful fresh spinach
  • 4 Medjool Dates, pitted (or 1 Tbsp maple syrup)
  • 5 large fresh mint leaves
  • 1 TBSP cacao nibs
  • 1 cup cashew milk

Instructions

  1. Add all ingredients to blender until smooth; add more milk depending on desired thickness.
  2. Enjoy friends!

Notes

Add matcha green tea powder for an extra antioxidant boost along with some caffeine.

If using peppermint extract, start with 1/4 tsp. If you use too much, you’ll get a toothpaste like taste.
