I heard we were going back to 2016. What a time what a time what a time 🎶
A time for smoothie bowls and endless toast combinations.
And when Instagram actually showed your content to your followers and your followers engaged 🫠 (RIP to my thousands of ❤️💀)
2016 I was fresh into starting Fit Mitten Kitchen. There was excitement, newness and enough avocado in our foodie feeds to last a lifetime.
I'm thankful for the jumpstart that 2016 gave me. If you've been here all this time, thanks for sticking around 🥰 if you're new to the crew, welcome welcome!

I don't know if it's the horoscopes I've been reading in my feed, the Chinese New Year coming up or what but is anyone else just feeling an overall energy shift? 👀 I really did start this year feeling so much lighter. I just hope it sticks 😝

The holidays aren’t complete without a little Eggnog magic ✨ (ad) @CountryFreshDairy Original Eggnog is velvety, sweet, and so nostalgic 🥰 Whether you love sipping it or using it in a recipe, these Baked Eggnog French Toast Cups are another delicious way to enjoy eggnog this season. Soft, custardy, perfectly baked bites of holiday comfort with all the warm and cozy spices. You’ve got to try it!

❤️ Save this recipe and grab some Country Fresh eggnog to make this fun twist on French Toast this holiday season!

🛒 What you need:
14 oz day old crusty bread (French loaf or sourdough), cut into 1” cubes
1.5 cups Country Fresh Original Eggnog
3 large eggs
1/3 cup liquid egg whites
1 tsp cinnamon
1/4 tsp nutmeg (if you like extra nutmeg flavor)
½ cup dried cranberries (optional – could also use fresh)

Glaze: ½ cup confectioners sugar + 2 teaspoons orange juice

🥣 How to Make:
- Make sure bread is dry. If you have a fresh loaf, cut into cubes then toast at 350ºF for 5 minutes to dry out.
- Preheat oven to 350ºF and grease a 12-cup muffin pan.
- In a large bowl add Country Fresh Original Eggnog, eggs and egg whites, cinnamon and nutmeg; whisk together until combined then fold in the cubed bread and cranberries, making sure all of the bread gets coated with the eggnog mixture.
- Place about ½ cup each of the soaked bread into each muffin cup, pushing pieces in as necessary.
- Bake for 20-25 minutes, or until tops are golden brown.
- Once cooled, add glaze with orange zest for a sweet topping, or serve with your favorite toppings, like whipped cream or maple syrup.

Around this time of year, I’m reminded how lucky we are to be able to gather around food. #ad The dishes we pass around the table – they hold so much more meaning than just ingredients cooked together. The recipes we share give us connection to one another. Memories being passed down, one plate at a time.

Roasted brussels sprouts hold a special place in my heart – it was the first vegetable I remember *really* enjoying. Mind you, this was in my early twenties, because my family of 8 didn’t grow up eating many vegetables. Between picking eaters, busy schedules and rotating through very plain meals (hi, buttered pasta), there wasn’t room for vegetables (i.e. food to go to waste).
But fast forward to our adult years, and it’s one dish we always put on the menu for our family gatherings. And for me, it holds memories of us coming together for a vegetable we now can’t get enough of. It’s the little things.

Healthy Halloween treats, yes plz! 🎃 I took my @calgiantberries chocolate covered blueberries recipe and turned it into a spooky snack 👻 (ad) These were so fun to make and my little ones loved them!

Here's what you need:
- about 1 cup blueberries (3-4 blueberries per mini muffin pan cup)
- 3/4 cup white chocolate (melted in a double boiler or steam basket works best) + 1 tsp coconut oil for smoother consistency
- 1 teaspoon matcha powder
- candy eyes
