Okay, I kind of hate that those lyrics were the first thing that popped into my head, but it was there. So out it came via keyboard and onto the screen. And I’m rolling with it…
Much like my life as of late! Guys, I am going to try not to complain… because I am VERY thankful we have parents willing to take us in for a few weeks… (and a brother who allows me to use his kitchen and dining table as an office, like right now for instance…) but I am kind of struggling. Anyone that is a planner, type A, routine-oriented person (AKA ME) can relate, I am sure. Our stuff is currently scattered between two houses, and in many different rooms. I don’t remember where my underwear drawer is…
THAT is how many places our stuff is scattered about… *sigh* I am kind of laughing a little bit now, so that’s good. Because two nights ago I was crying to Drew. I feel like there is so much I want to do these next couple months and not having a place to just BE and get organized and whatnot is putting a damper on things for me. Of course Drew is here to remind me I can’t do everything at once, and I need to just take things one day at a time, and slow my roll a bit. Thank goodness for him being so supportive. Trying to be okay with not having a plan is obviously driving me nuts. But all in all, I know this is temporary, and I am trying to move forward as best as I can.
Golden Berry Granola Bars
So enough chitter chatter, let’s get to these bars. I’m very excited to be sharing these with you today because I’ve just discovered my new favorite thing: GOLDEN BERRIES. And because they’re my new favorite that means I get to share them with you here 🙂
What are golden berries, you ask? Nope, they’re not golden raisins. They’re a fruit found in South America and are loaded with health benefits! You should all know how much I love super healthy foods (ahem, matcha) so the fact that these little golden berries are my new love should come as no surprise to you. These little berries also have less sugar than other small berries, as well as contain flavonoids (antioxidants), and are a good source of fiber.
I find them to be the perfect combination of tart and sweet, and I LOVE them in these granola bars.
All you need is ONE BOWL and SEVEN INGREDIENTS to make these Golden Berry Granola Bars. Originally I was going to add some coconut, almonds, and other things but I thought “No, Ashley… people like simple. Keep these bars simple.”
So here’s what you’ll need:
- gluten-free rolled oats
- gluten-free all purpose flour
- milled flaxseed
- cinnamon
- golden berries
- brown rice syrup
- coconut oil
Then all you do is mix together the ingredients in one bowl, press into pan, bake for 20-25 minutes and you have easy, healthy, and chewy homemade granola bars! With four grams of fiber as well as four grams of protein and only 10 grams of sugar! SO much better than store-bought and no funny ingredients.
Plus the addition of golden berries?! You can’t go wrong here.

Ingredients
- 2 cups gluten-free rolled oats
- 1/4 cup flaxseed meal
- 1/4 gluten-free all purpose flour*
- 2/3 cup golden berries
- 1/2 TBS ground cinnamon
- 1/3 cup + 1 TBS brown rice syrup*
- 1/4 cup coconut oil, melted
Instructions
- Preheat oven to 325ºF and line square baking pan with parchment paper, set aside.
- In a large bowl, combine all of your dry ingredients. Using a large rubber spatula, stir in brown rice syrup and melted coconut oil.
- Press mixture into prepared baking pan, evenly pressing into all corners. Bake for 20-25 minutes, until edges are lightly golden.
- Allow bars to cool in pan for one hour before cutting into 10 bars. Bars can be kept in airtight container at room temperature. Enjoy!
Notes
*regular whole wheat flour may also be subbed
*honey can probably be subbed, but I have not tried this myself. The bars may not hold together quite as well.

Wow I’ve never tried golden berries before but I definitely want to now! I HATE not being in a routine, but I have to remind myself that this is how life is sometimes. Being in the present moment is more important than worrying about sicking to a routine and driving myself crazy 🙂

This made me recall the days I shoveled those Nature Valley honey bars into my face. I probably racked up 80 grams of sugar in one sitting those days, hahaha! Anyways, I’ve never actually had golden berries but I bet they taste AWESOME. I would love to try these bars if I ever come across golden berries!

I lived at home with my rents for 8 months while the boyfriend took a hiatus from work and traveled the world for a bit. I really struggled with waiting for my “real life” to start up again, but now I look back on that time and realize how much I enjoyed being at home with my family!
