Wash, trim and cut parsnips lengthwise, into about 3″ strips, 1/2″ or so wide.
On a rimmed baking sheet toss together parsnip strips with coconut oil until coated. Sprinkle salt, pepper, and seasoning. Bake for 12 minutes, then take pan out and flip fries. Bake for an additional 10-15 minutes, or until lightly golden and crispy.
— I do not recommend using this particular coconut oil at higher than 375F, as the smoke point is not that high and the parsnips/coconut oil will burn.
